In my pick for 2020’s recipe of the year, Meera Sodha taps into the iconic flavor combination—which is the backbone of the Bombay sandwich, a beloved Indian street food—for the Bombay rolls in her latest cookbook. Sodha’s book is called East, and it is (though she had no way of knowing or planning for this) the perfect book for right now. The Bombay rolls, like the ingredient dream team they’re based around, manage to check a startling number of flavor and textural boxes. They’re cheesy, crunchy, spicy, bright, buttery—and thanks to a bit of brilliance on Sodha’s part, flaky as well. Grated sharp cheddar cheese and thinly sliced red onion round out the ingredient list, sprinkled generously over the top.
