Pizza Rustica is an Italian Easter pie and, despite its name, it doesn't have anything to with pizza. The enriched pie crust gets filled with eggs, cheese, meats, and spinach, and it's often eaten on Good Friday to celebrate the end of Lent. We added eggs to our basic pie crust to make it sturdy enough to hold all of the delicious filling together. A spring form pan makes it much easier to slice and serve and you can simply remove the sides.
